Vegetable Beef Soup

Yield: Serves about 8
  • 2 lbs. beef, cut into cubes
  • 2 Tbsp. oil
  • 4 c. water
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 small onion, chopped
  • 1 1/2 c. diced tomatoes
  • 1/2 c. peas
  • 1/2 c. corn
  • 1 can green beans
  • 5 beef bouillon cubes
  • 2 tsp. salt
  • 1/2 tsp. parsley
  • 1/4 tsp. each oregano, thyme, pepper
  • 2 bay leaves
  • dash of sage
  • 3 medium potatoes, diced
  1. Brown meat in oil in large Dutch oven. Add all remaining ingredients except potatoes and simmer 1 hour. Add potatoes and simmer 1 more hour. Discard bay leaves and serve.
This is a VERY hearty soup, so a little goes a long way. It's also flexible, as you can omit any veggies you don't have (but the more the better!).
