Turkey Pile-On

Yield: Serves 4-6
  • 1/2 c. chopped onion
  • 1/3 c. and 1/4 c. butter, softened
  • 1/4 c. flour
  • 1 1/2 - 2 c. chicken broth (or drippings from cooked turkey)
  • 3/4 tsp. salt
  • 2 c. half and half
  • 3 c. cooked turkey (or chicken)
  • 3 egg yolks
  • 1/2 tsp. paprika
  • 1 Tbsp. lemon juice
  1. Cook onion in 1/3 c. butter until tender but not brown. Stir in flour. Add broth, salt, and half/half; cook and stir constantly until sauce thickens and bubbles. Add turkey and heat, stirring occasionally.
  2. Meanwhile, in small bowl blend egg yolks, paprika and 1/4 c. butter; set aside.
  3. Add to turkey mixture lemon juice. Heat gravy to bubbling, then add yolk mixture all at once, stirring until blended. Immediately remove from heat. Arrange pile-on ingredients buffet-style and allow guests to serve themselves.Pile-On Ingredient order:
  4. cooked rice (6 cups)
  5. chinese noodles (5 oz. or less)
  6. gravy
  7. grated cheddar cheese (1 lb.)
  8. crushed pineapple, drained (20 oz. can)
  9. chopped tomatoes (3 tomatoes)
  10. flaked coconut
  11. chopped green onions (1/2 bunch)
  12. slivered almonds (1/2 cup)
This is an excellent post-Thanksgiving meal, and another meat/veggies/starch all-in-one. This will definitely feed a crowd and require a fair amount of effort to prepare, but it is so worth it. The ingredients may not seem to go well together, but believe me, they are fabulous! This is a family favorite that Brian said had not been overpraised. :)
