Spinach Pasta and Tuna

Yield: Serves 3
  • 7 oz. rotini
  • 2 Tbsp. butter
  • 8 oz. sour cream
  • 1 c. shredded cheddar cheese
  • 8 oz. shredded Monterey Jack cheese, divided
  • 6 oz. fresh spinach
  • 2 cans tuna
  1. Cook pasta according to package directions. Drain, then stir in butter until it melts. Grease a slow cooker, then mix sour cream, cheddar cheese, half Monterey Jack and spinach together. Fold in pasta and cook on Low for 1 1/2-2 hours. Before serving, stir in tuna and top with remaining cheese. Serve immediately.
Not super fabulous, but not bad and very easy.
