Spinach and Tomato Tortellini Soup

Yield: Serves 6
  • 1 1/2 Tbsp. olive oil
  • 1 1-1/2 c. finely chopped onion
  • 6 cloves garlic, minced (more or less)
  • 4 c. chicken broth
  • 28 oz. diced canned tomatoes
  • salt and pepper to taste
  • 20 oz. package three cheese tortellini
  • 1 tsp. sugar
  • 6-9 oz. fresh spinach, chopped
  • 3 Tbsp. chopped fresh basil
  • grated Parmesan cheese (garnish)
  1. Over medium heat, saute onion in olive oil until tender; add garlic and saute 30 seconds longer. Add chicken broth, tomatoes with juice, salt and pepper and bring to a boil. Add tortellini and let boil 7 minutes (or longer if directed on tortellini package). Stir in sugar, spinach and basil and cook until heated through (spinach should wilt). Serve into bowls and garnish with Parmesan cheese.
