Philly Cheesesteak Stuffed Peppers

Yield: Serves 4
  • 2 large red bell peppers
  • 8 slices provolone cheese
  • 2 Tbsp. butter
  • 2 Tbsp. olive oil
  • 1 Tbsp. minced garlic
  • salt and pepper to taste
  • 1 medium sweet onion, sliced
  • 4 oz. canned mushroom pieces, drained and chopped
  • 10 oz. thinly sliced roast beef
  1. Preheat oven to 400 degrees. Slice peppers in half lengthwise and remove ribs and seeds. In large skillet over medium heat melt butter. Add olive oil, garlic, salt, pepper, onion and mushrooms and saute until tender. Add beef and cook until heated through. Line inside of each pepper with a slice of cheese. Stuff with meat mixture and top with another slice of cheese. Bake 15-20 minutes until cheese on top is golden brown.
Very savory, and the equivalent of a philly cheesesteak without the carbs!
