Peanut Butter Cup Ice Cream

Yield: Serves 4
  • 1 c. peanut butter (not natural)
  • 2/3 c. sugar
  • 1 c. whole milk
  • 2 c. heavy cream
  • 1 tsp. vanilla extract
  • roughly 1 c. chopped Reese's peanut butter cups
  1. In medium bowl, use hand mixer on low speed to combine peanut butter and sugar until smooth. Add milk and mix on low until sugar is dissolved, 1-2 minutes. Stir in heavy cream and vanilla. Cover and refrigerate 1-2 hours, or overnight. Freeze according to manufacturer's directions. During last 5 minutes of freezing, add Reese's peanut butter cups.
DO NOT use more than one cup of peanut butter, or this ice cream will be overwhelmingly thick.
