Parmsean Crusted Salmon and Broccoli

Yield: Serves 4
  • 1 1/4 lbs. broccoli, cut into bite-size pieces
  • roughly 2 1/2 Tbsp. olive oil
  • salt, pepper and garlic powder to taste
  • 4 (6 oz.) skinless salmon fillets
  • 1 1/2 Tbsp. mayonnaise
  • 1 1/2 tsp. lemon juice (zest lemon first)
  • 1 clove garlic, minced
  • 1/4 c. parmesan cheese
  • 1/4 c. bread crumbs
  • 1 tsp. parsley
  • 1 1/2 tsp. lemon zest
  • 1/4 tsp. thyme
  • 1 1/2 Tbsp. olive oil
  1. Preheat oven to 400 degrees. Place broccoli on large baking sheet. Drizzle with olive oil. Sprinkle with salt, pepper and garlic and toss to coat. Spread broccoli to edges of pan, leaving space in center for salmon fillets. Season bottoms of salmon with salt and pepper and place on baking sheet, leaving about 3/4" between fillets. In mixing bowl stir together mayo, lemon juice and garlic; brush over fillets. Season tops with salt and pepper. In another mixing bowl stir together remaining ingredients, then spread evenly over tops of salmon. Bake until fillets have cooked through, about 12-15 minutes.
