Mom Koser's Black Bottom Cupcakes

Yield: 18 cupcakes
  • 1 1/2 c. flour
  • 1 c. sugar
  • 1/4 c. baking cocoa
  • 1 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1/3 c. oil
  • 1 c. strong black coffee
  • 1 Tbsp. apple cider vinegar
  • 1 tsp. vanillaFilling Ingredients:
  • 8 oz. cream cheese, room temperature
  • 1 egg
  • 1/3 c. sugar
  • 1/8 tsp. salt
  • 1 c. semisweet chocolate chips
  1. Preheat oven to 350 degrees. Sift together dry ingredients; mix together liquid ingredients. Add liquid to dry and beat until smooth. Fill each of 18 muffin cups evenly, approximately 1/3 full.
  2. Beat together all filling ingredients except chocolate; stir in when mix is smooth. Divide filling among muffin cups. Bake 15-20 minutes or until toothpick inserted comes out clean.
