Mom Koser's Baked Squash

  • 3 lbs. yellow squash
  • 1/2 c. chopped onions
  • 1/2 c. cracker or bread crumbs
  • 2 eggs
  • 1 stick of butter
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • black pepper to taste
  1. Wash and cut up squash. Boil until tender; drain and mash. Add all ingredients except half of the butter and bread crumbs. Pour mixture into baking dish, then spread remaining butter on top. Sprinkle with remaining bread crumbs and bake at 375 degrees for about 1 hour (should be almost brown).
