Mojito Fruit Salad

Yield: Serves 6-8
  • 4 c. chopped watermelon
  • 1 lb. strawberries, chopped
  • 6 oz. raspberries
  • 6 oz. blueberries
  • 1/4 c. packed mint, chopped
  • 1/4 c. fresh lime juice (about 3 limes)
  • 3 Tbsp. powdered sugar
  1. In large bowl add watermelon, strawberries, raspberries, blueberries and mint. In small separate bowl stir together lime juice and powdered sugar. Pour juice over fruit and gently toss with a spatula. Cover and let sit in fridge at least 15 minutes to allow juices to blend.
Great for a summer picnic or potluck!
