Mexican Stuffed Shells

Yield: Serves 4
  • 20-25 jumbo pasta shells
  • 1 lb. ground beef
  • 1/2 c. diced onion
  • 2 Tbsp. taco seasoning (or desired seasonings)
  • 4 oz. cream cheese
  • 10 oz. enchilada sauce, or tomato sauce
  • 1 c. salsa
  • 1 1/4 c. cheddar cheese
  • 1/2 c. mozzarella cheese
  1. Cook pasta according to package directions and drain. Cook ground beef and onions, and drain grease. Heat oven to 350 degrees. Stir in taco seasoning and cream cheese until cheese is melted. Combine enchilada sauce and salsa in small bowl. Pour half into bottom of 9x13" pan, reserving the rest for later. Fill each jumbo shell with a heaping spoonful of meat mixture and place in pan with sauce. Pour remaining sauce on top of shells, cover with foil and bake 30 minutes. Remove foil, top with cheeses and bake another 15 minutes until cheese is melted.
