Meat and Potato Quiche

Yield: Serves 4
  • 3/4 lb. ground beef
  • 3 Tbsp. olive oil
  • 3 c. coarsely grated raw potatoes
  • 1 c. grated cheddar cheese
  • 12 oz. can evaporated milk
  • 2 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. dried parsley
  • 1/2 tsp. basil
  1. Preheat oven to 425 degrees. Grate potatoes and press into 9" pie pan; drizzle with oil. Bake potato crust 15-20 minutes, or until just beginning to brown. Remove from oven.
  2. Meanwhile, brown beef and drain (if desired, add garlic and Italian seasoning while browning). In bowl, mix together milk, eggs, and seasonings. Layer meat and cheese over potato crust, then top with mixture. Return to oven and bake about 25 minutes, or until lightly browned and knife inserted comes out clean. Cool 5 minutes and serve.
