Italian Chicken Pasta

Yield: Serves 6
  • 7 chicken breast halves
  • 2 c. Italian salad dressing
  • 16 oz. uncooked rigatoni
  • 1/4 c. butter
  • 28 oz. diced tomatoes with Italian herbs
  • 1/4 tsp. red pepper
  • 1 Tbsp. dried parsley
  • parmesan cheese
  1. Dice chicken and place in Ziploc bag; add Italian dressing and marinate at least 30 minutes. Meanwhile, cook pasta according to package directions and drain.
  2. Melt butter in large pot over medium heat. Scoop chicken into pot, allowing some marinade to go with it; discard remaining marinade. Add diced tomatoes and cook 15 minutes or so, seasoning with red pepper and parsley. Serve over pasta and sprinkle with cheese.
Serve with crusty bread.
