Herbed Citrus Roasted Chicken

Yield: Serves at least 6
  • 1/4 c. olive oil
  • 2 Tbsp. sugar
  • 2 whole lemons, one juiced and one sliced
  • 2 whole oranges, one juiced and one sliced
  • 1 Tbsp. Italian seasoning
  • 1/2 tsp. paprika
  • 1 tsp. onion powder
  • 1/4 tsp. red pepper
  • salt and pepper to taste
  • 4 1/2 lbs. bone-in chicken thighs or legs
  • 1 medium onion, thinly sliced
  • to taste: dried thyme and rosemary
  • cooked rice (4 cups?)
  1. In small bowl, whisk together olive oil-salt and pepper. Place chicken parts in large Ziploc bag and pour marinade over them. Seal and refrigerate a couple hours, or overnight. Heat oven to 400 degrees. In 9x13" baking dish place chicken and marinade. Arrange slices of lemon, orange and onion around and under chicken pieces. Sprinkle with thyme and rosemary, then bake uncovered 1 hour. Serve over cooked rice.
Marinating the chicken is not required, but it came out so tender and flavorful after doing so!
