Ham and Cheese Puff Pancake

Yield: Serves 4-6
  • 1/4 c. butter, for pan
  • 1 c. milk
  • 1 c. flour
  • 4 eggs, room temperature
  • 1/4 tsp. salt
  • 1 c. diced ham
  • 1-2 c. shredded cheddar
  • 1 tsp. dried parsley
  1. Heat oven to 425 degrees. Place butter in 9x13" dish and heat in oven 5-10 minutes until melted. Remove from oven and tilt pan to cover with butter. In medium bowl whisk together milk, flour, eggs and salt until smooth. Pour batter into pan and quickly top with ham, cheese and parsley. Bake 20-25 minutes, or until puffed up and cheese is golden brown. Cool slightly before serving.
Although this is a very easy dish, I wasn't super impressed with it. I made it for my Sunday school class, though, and people raved! It did score points with me on how easy it was.
