Garlic Chicken

Yield: Serves 4
  • 2-3 cloves garlic, crushed
  • 1/4 c. olive oil (or butter)
  • 1/3 c. bread crumbs
  • 1/3 c. parmesan cheese
  • 4 skinless boneless chicken breasts
  1. Preheat oven to 425 degrees. Warm garlic and oil to blend flavors. In separate dish mix bread crumbs and cheese. Dip chicken into liquid, then into dry mix. Place in shallow baking dish and bake 30-35 minutes.
This makes great leftovers--place on toasted sandwich bread spread with mayo and melt some mozzarella on top. Yum!
