French Bread Tomato Soup

Yield: Serves 4
  • 6 Tbsp. olive oil, divided
  • pinch crushed red pepper flakes
  • 1 loaf stale French bread, cut into cubes
  • 2 cloves garlic, peeled and sliced
  • 3/4 c. chopped onion
  • 28 oz. diced tomatoes
  • 3 tsp. dried basil
  • 5 c. chicken broth
  • 1 tsp. parsley
  • 1/4 c. parmesan cheese
  1. Heat 4 Tbsp. olive oil in large pot. Add pepper and bread and fry until lightly browned (more oil may be necessary). Remove bread to paper towels. Heat 2 more Tbsp. oil and cook garlic and onion until softened, about 5 minutes. Add tomatoes, basil and bread; cook about 10 minutes. Add remaining ingredients and bring to a boil. Reduce heat to low and simmer 20-30 minutes.
This is surprisingly tasty!
