Foil-Wrapped BBQ Cheddar Chicken

  • BBQ sauce
  • 4 boneless, skinless chicken breasts
  • unpeeled baby potatoes, chopped (4?)
  • 1 red or green bell pepper, seeded and diced
  • 1/3 c. chopped onion
  • to taste: salt and pepper
  • 1 c. shredded cheddar cheese
  1. Heat oven to 375 degrees. On 4 large squares of foil place food in the following order: 1 Tbsp. BBQ sauce, chicken, chopped vegetables and seasonings. Bring edges together in center and fold to seal. Place on baking sheet and bake 35 minutes. Open foil packets and carefully pull back edges; contents will be hot. Sprinkle with cheese and return to oven unsealed for two minutes. Pour foil contents onto plate and serve.
This was so good it got gobbled down immediately. Since it's so easy, I recommend doubling the recipe so that there will be leftovers.
