Egg, Potato and Cheese Casserole

Yield: Serves 6
  • 6 medium potatoes
  • 8 eggs
  • 2 Tbsp. water
  • salt and pepper to taste
  • 1 1/2 c. grated cheese
  • half a pkg. chopped hot dogs or smokies, for topping
  1. Peel potatoes and cook until soft. Grate and spread over bottom of greased 8x12" dish. Combine all remaining ingredients except hot dogs and cheese and pour over potatoes. Top with cheese, cover and bake at 350 degrees for 30 minutes. Uncover and bake another 15 minutes. Top with hot dogs and serve.
