Easy Chowder

Yield: Serves 4
  • 8 slices bacon
  • 1 c. chopped onion
  • 2 cans cream of potato or celery
  • 3 c. milk
  • 2 cans (8 oz. each) diced carrots (perhaps fresh?)
  • 2 c. sliced smokies
  • 2-4 tsp. dried parsley
  1. Fry bacon until crisp; remove to paper towel and crumble. Cook onion in bacon drippings until tender. In large pot, combine all ingredients (except bacon drippings). Heat through, stirring occasionally.
