Easy Bread Pudding

Yield: Feeds 4
  • 6 slices day-old bread
  • 2 Tbsp. butter, melted
  • 1/2 c. raisins (optional)
  • 1/4 c. chopped nuts (optional)
  • 4 eggs, beaten
  • 2 c. milk
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract
  1. Heat oven to 350 degrees. In 8" glass baking dish, break bread into small pieces. Drizzle melted butter over bread; top with raisins and nuts. In medium mixing bowl, beat remaining ingredients until well mixed. Pour over bread and lightly push down with a fork until bread is covered and soaking up egg mixture. Bake for 45 minutes, or until top springs back when lightly tapped.
I served this as a breakfast. To serve as a dessert, increase the sugar to 3/4 c. and serve with whipped cream. It is a very flexible recipe--pretty much any kind of bread can be used, and brown sugar could be subbed for the white sugar. More or less bread can be used to achieve the desired consistency.
