Curried Chicken Casserole

Yield: Serves 6
  • 3 cooked chicken breasts
  • 1 large bag of broccoli, frozen or fresh
  • 2 cans cream of chicken soup
  • 1/2 c. mayonnaise
  • 1/2 lb. cheddar, grated
  • curry powder to taste
  • seasoned bread crumbs or croutons to taste
  • 5-6 c. cooked rice
  1. Preheat oven to 350 degrees.
  2. Cut chicken into bite-size pieces. Cook broccoli, drain, and put in bottom of 8x12" casserole dish. Place chicken on top.
  3. Mix soup, mayo and cheddar; add curry powder to taste. Spread over the chicken and sprinkle with bread crumbs. Cover with foil and bake 30-40 minutes. Uncover and bake another 10-15 minutes. Let stand about 10 minutes before serving. Serve over rice.
