Crockpot Mexican Chicken Soup

Yield: Serves 4
  • 2 chicken breasts
  • 1 c. chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained (or 1-2 c. frozen corn)
  • 1 c. salsa
  • 1 package taco seasoning
  • 1/2 c. sour cream
  • 1/2 c. cheddar cheese
  • 1 1/2 c. cooked rice (optional)
  1. Place chicken in crockpot. Top with broth, beans, salsa and taco seasoning. Cover and cook on Low 6 hours (or on High 3 hours). Remove chicken and shred (it may be tender enough to shred right there in the crockpot), then re-add chicken. Stir in sour cream, cheese and rice and serve.
