Crockpot Garlic Parmesan Potatoes

Yield: 8 servings
  • 3 lb. baby red potatoes, halved
  • 2 Tbsp. olive oil
  • 2 Tbsp. melted butter
  • 4 cloves garlic, minced
  • 1/2 tsp. each: dried oregano, basil and dill
  • 2 tsp. dried parsley
  • salt and pepper to taste
  • 1/4 c. grated parmesan cheese
  1. Lightly grease the inside of a crockpot. Place everything except cheese in crockpot and stir. Cover and cook until tender on Low 4-5 hours, or High 2-3 hours. Just before serving add cheese and stir.
This is perfect for a church potluck!
