Crockpot Chicken Parmesan Soup

Yield: Serves 6
  • 3 garlic cloves, minced
  • 3/4 green bell pepper, chopped
  • 14.5 oz. diced tomatoes
  • 1/2 lb. boneless, skinless chicken breasts
  • 3 c. chicken broth
  • 1/2 c. chopped onion
  • 1/2 c. parmesan cheese, plus extra for garnish
  • 1 tsp. dried basil
  • 2 tsp. dried oregano
  • 1/8 tsp. red pepper
  • 4 oz. uncooked spiral pasta
  1. In crockpot combine all ingredients except pasta. Cover and cook on High 3 1/2 hours, or on Low 7 hours. Shred chicken inside crockpot using a fork. Add pasta, cover and cook on High 30 minutes until pasta is cooked.
This goes beautifully with homemade bread and butter.
