Creamy Shrimp Pasta

Yield: Serves 2-3
  • 1 stick butter
  • 1 lb. raw shrimp
  • 1-2 tsp. minced garlic, or garlic powder to taste
  • 1-2 Tbsp. parsley
  • 1-2 Tbsp. basil
  • salt and pepper to taste
  • 1-2 Tbsp. lemon juice
  • 1/3 block softened cream cheese
  • 1 can diced tomatoes with juice
  • 1/2 lb. angel hair pasta, cooked and drained
  • parmesan cheese for topping
  1. Melt butter in large skillet. Add shrimp, all seasonings and lemon juice and cook until shrimp are pink and opaque. Stir in cream cheese and tomatoes and let simmer a few minutes to blend. Serve over pasta and top with parmesan.
This dish is intentionally very liquid. You can stretch the dish by using a whole pound of pasta, but the flavor will be much less intense.
