Cream Cheese Banana Bread

Yield: 1 loaf
  • 1 egg
  • 1/2 c. packed brown sugar
  • 1/4 c. white sugar
  • 1/4 c. liquid-state coconut oil (or canola or vegetable)
  • 1/4 c. sour cream
  • 2 tsp. vanilla extract
  • 1 c. mashed ripe bananas (about 2 large bananas)
  • 1 c. flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • pinch of saltFilling Ingredients:
  • 1 egg
  • 4 oz. softened cream cheese
  • 1/4 c. sugar
  • 3 Tbsp. flour
  1. Heat oven to 350 degrees. Grease and flour a 9x5" loaf pan; set aside. In large bowl beat egg, sugars, coconut oil, sour cream and vanilla. Stir in bananas. Fold in flour, baking powder, baking soda and salt. Pour half the batter into prepared pan; set aside remaining half.
  2. In medium bowl beat together all filling ingredients. Pour into pan on top of bread mixture, lightly spreading to all corners with spatula. Top with remaining batter, gently spreading to all corners with spatula. Bake 48-50 minutes or until top is domed, golden and center is set; inserted toothpick should be clean, or with a few moist crumbs but no batter. Let cool in pan 15 minutes, then turn onto wire rack to cool completely.
Best banana bread ever! Baking times may vary, and toothpick may not be completely clean because of cream cheese mixture. If you feel tops and sides will become too brown before center cooks through, you may tent the pan with a sheet of foil after 30 minutes. Watch your bread, not the clock.
