Cream Cheese and Garlic Muffins

Yield: 12 muffins
  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/8 tsp. salt
  • freshly ground black pepper to taste
  • 2 eggs
  • 2/3 c. plain yogurt
  • 6 Tbsp. melted, cooled butter
  • 3/4 c. soft cream cheese, flavored with garlic and herbs
  1. Heat oven to 400 degrees and grease 12 muffin cups. Sift together flour, baking powder, baking soda, salt and pepper in a large bowl. In separate bowl beat eggs, then beat in yogurt, butter and cream cheese until smooth. Pour liquid ingredients into dry ingredients and stir gently until just combined. Pour batter into muffin pan and bake about 20 minutes until well risen, golden brown and firm to the touch. Let muffins cool in pan 5 minutes, then serve warm.
