Crab-Stuffed Baked Potatoes

Yield: 4 potatoes
  • 4 large baking potatoes
  • 1/2 stick butter
  • 1/2 c. whipping cream
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 green onion, chopped
  • 8 oz. flaked crab meat
  • shredded cheddar cheese to taste
  1. Prick potatoes with fork and bake in microwave on High for 7-9 minutes, or until knife slides easily in. Halve each potato lengthwise, scoop out flesh and leave skins intact. In large bowl, mash potato flesh with butter. Add all remaining ingredients except cheese, then fill potato skins with mixture. Sprinkle with cheese and bake at 350 degrees for 15 minutes.
These are the best baked potatoes ever! Don't leave out a single ingredient, as they all combine for that "WOW" flavor. Potatoes can also be prebaked in oven for 1 hour at 375 degrees.
