Crab Quiche

Yield: Serves 4
  • 9" pie crust
  • 4 eggs
  • 1 c. heavy cream
  • 1/2 tsp. each of salt and pepper
  • 3 dashes of hot sauce
  • 1 c. Monterey Jack cheese
  • 1/4 c. Parmesan
  • 8 oz. crab meat
  • 1 green onion, chopped
  1. Preheat oven to 350 degrees. Bake crust 10 minutes and allow to cool. Whisk together all other ingredients and pour in crust. Bake 25-30 minutes, then turn off oven and let sit 20-30 minutes (gives smoother texture and makes it firm).
