Coconut Pecan Granola Bars

Yield: 10-12 bars
  • 1/4 c. melted coconut oil
  • 1/4 c. plus 2 Tbsp. honey
  • 2 c. old fashioned oats
  • 1/2 c. shredded coconut
  • 1/2 c. pecans, chopped
  • 1/2 c. semisweet chocolate chips
  1. Place waxed paper in 8x8" dish. Mix together all ingredients except chocolate and press into dish. Bake at 300 degrees for 30 minutes. Remove from oven and press chocolate chips into mixture. Refrigerate 30 minutes, then cut into bars.
Should keep in the fridge for 2-3 weeks.
