Chocolate Orange Muffins

Yield: 12 muffins
  • 2 oranges
  • about 1/2 c. milk
  • heaping 1 1/2 c. flour
  • 1/2 c. cocoa
  • 1 Tbsp. baking powder
  • 1/8 tsp. salt
  • heaping 1/2 c. firmly packed brown sugar
  • 1 c. semisweet chocolate chips
  • 2 eggs
  • 6 Tbsp. melted, cooled butterFrosting Ingredients:
  • 2 oz. semisweet chocolate
  • 2 Tbsp. butter
  • 2 Tbsp. water
  • 1 1/2 c. powdered sugar
  • strips of orange zest, to decorate
  1. Heat oven to 400 degrees and grease 12 muffin cups. Finely grate the rind from the oranges and squeeze the juice. Make up the juice to 1 cup with milk and add the orange rind. Sift together flour, cocoa, baking powder and salt into large bowl; stir in brown sugar and chocolate chips.
  2. In separate bowl beat eggs; beat in milk, orange mixture and butter. Pour liquid ingredients into dry ingredients and stir; do not overmix. Spoon into muffin cups and bake about 20 minutes, until well risen and firm to the touch. Let cool in pan 5 minutes, then transfer to wire rack and let cool completely.
  3. For frosting, break chocolate into heatproof bowl. Add butter and water, and stand bowl over saucepan of gently simmering water. Stir constantly until melted. Remove from heat, sift in powdered sugar and beat until smooth. Spread frosting while still warm, then garnish with orange zest.
Soooo good! If you love dark chocolate and fruit, you won't be able to stop eating these!
