Chocolate Cream Muffins

Yield: 12 muffins
  • heaping 1 1/2 c. flour
  • 1/2 c. cocoa
  • 1 Tbsp. baking powder
  • 1/8 tsp. salt
  • heaping 1/2 c. firmly packed brown sugar
  • 1 c. white chocolate chips
  • 2 eggs
  • 1 c. heavy cream
  • 6 Tbsp. melted, cooled butter
  1. Heat oven to 400 degrees and grease 12 muffin cups. Sift together flour, cocoa, baking powder and salt into large bowl; stir in sugar and chocolate chips. In separate bowl beat eggs, cream and butter. Pour into dry ingredients and stir until just combined. Spoon into muffin pan and bake about 20 minutes, until well risen and firm to the touch. Let cool in pan 5 minutes, then serve warm or transfer to wire rack to cool completely.
