Chocolate Cinnamon Muffins

Yield: 12 muffins
  • heaping 1 1/2 c. flour
  • 1/2 c. cocoa
  • 1 Tbsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. salt
  • heaping 1/2 c. firmly packed brown sugar
  • 1 c. semisweet chocolate chips
  • 2 eggs
  • 1 c. milk
  • 6 Tbsp. melted, cooled butter
  1. Heat oven to 400 degrees and grease 12 muffin cups. Sift together flour, cocoa, baking powder, cinnamon and salt into large bowl; stir in sugar and chocolate chips. In separate bowl beat eggs, milk and butter. Pour into dry ingredients and stir until just combined. Spoon into muffin cups and bake about 20 minutes, until well risen and firm to the touch. Let cool in pan 5 minutes, then serve warm or transfer to wire rack to cool completely.
