Chicken, Spinach and Bell Pepper Pizza

Yield: 1 pizza
  • 1 pizza crust
  • 4-5 oz. fresh spinach, washed and drained
  • pizza sauce
  • 1 c. cooked torn chicken
  • 1 medium roasted red pepper, drained and sliced
  • 6-8 oz. mozzarella cheese, shredded
  • salt and pepper to taste
  1. Place spinach in small saucepan over medium heat and cook 1-2 minutes, until wilted. Drain thoroughly. Heat oven to 425 degrees. Spread pizza sauce on crust and top with spinach, chicken, bell pepper and cheese. Sprinkle with salt and pepper. Bake 10-12 minutes until cheese is melting and turning golden and crust is crisp underneath.
Very tasty! Roasted bell pepper is a must, rather than fresh.
