Chicken and Fried Rice

Yield: 4 servings
  • 2 Tbsp. oil
  • 2 cloves of garlic, diced
  • chopped onion to taste
  • 3 chicken breasts, diced
  • salt, pepper and rosemary to taste
  • 2 carrots, diced
  • 1/2 c. frozen peas, thawed
  • 2 eggs, beaten
  • 3 c. cooked rice
  • 1 1/2 Tbsp. soy sauce
  1. Saute garlic and onion in oil until tender. Add chicken and spices and stir-fry until cooked. Add carrots and peas and stir-fry until tender, about 7 minutes. During last two minutes make a well in center of chicken and veggie mixture, add eggs and let sit before gently stirring.
  2. Stir in rice and soy sauce and heat through. Serve.
Tasty comfort food. Chopped, cooked ham also is great in this!
