Cheesy Spinach Ravioli

Yield: Serves 4
  • 1 Tbsp. olive oil
  • 3 cloves garlic, crushed
  • 1-2 jalapenos, seeded and chopped*
  • 2 (14.5 oz.) cans diced tomatoes
  • 48 meat-filled frozen ravioli
  • 1/3 c. cream
  • 4-5 oz. fresh spinach
  • 6 oz. Italian cheese, grated
  1. Heat oil in deep skillet; add garlic and jalapeno and cook until tender. Stir in tomatoes with juice and cook 2-3 minutes. Add ravioli and cook 2-3 minutes more, stirring. Add cream and stir. Top with spinach and cheese, then cover and let simmer 5 minutes or so.
*When handling the jalapenos, be sure to wear gloves. Otherwise the oil will stay on your hands all night and burn you. If you get any on your hands do not touch your face.
