Caramel Apple Nut Bars

Yield: 24 bars
  • 2 c. flour
  • 2 c. quick-cooking or instant oats
  • 1 1/2 c. packed brown sugar
  • 1 1/4 c. butter, softened
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. melted caramels
  • 2 medium apples, peeled and chopped (1 1/2-2 c.)
  • 1 c. chopped pecans
  1. Heat oven to 350 degrees. Grease bottom and sides of 9x13" pan. In large bowl combine flour, oats, sugar, butter, baking soda and salt with mixer or spoon until crumbly (or use pastry blender, perhaps?). Press half of mixture in pan and bake 10 minutes. Sprinkle apples and pecans over crust. Melt caramels and drizzle on top. Sprinkle with remaining crust mixture and bake 20-25 minutes, or until golden brown. Cool completely, about 1 hour 30 minutes.
This is exactly what it sounds like--the perfect fall dessert.
