Breakfast Ham Cups

Yield: 10 ham cups
  • 1 package sliced ham (not shredded), about 10 slices
  • 1/4 c. chopped onion
  • 1/4 c. chopped bell pepper (any color)
  • 2 Tbsp. butter
  • 5 eggs
  • 4 Tbsp. milk
  • salt and pepper to taste
  • 2-4 oz. shredded cheese
  • 1-2 green onions, chopped
  1. Grease muffin cups and heat oven to 350 degrees. Gently line each cup with one slice of ham. In microwaveable bowl place onion, bell pepper and butter; microwave until cooked, 1-2 minutes. Meanwhile, beat together eggs, milk, salt and pepper. Set aside. Evenly divide onions and bell pepper between muffin cups, then add cheese. Pour milk mixture on top (about 1/2 egg per cup) and sprinkle with green onions. Bake 20-25 minutes and serve.
Very tasty, easy and flexible--you can add whatever you like to these.
