Blueberry Muffins

Yield: 12 muffins
  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/8 tsp. salt
  • heaping 1/2 c. firmly packed brown sugar
  • scant 1 1/2 c. frozen blueberries
  • 2 eggs
  • 1 c. milk
  • 6 Tbsp. melted, cooled butter
  • 1 tsp. vanilla extract
  • finely grated rind of 1 lemon
  1. Heat oven to 400 degrees and grease 12 muffin cups. Sift together flour, baking powder and salt into large bowl; stir in sugar and blueberries. In separate bowl beat eggs; beat in milk, butter, vanilla extract and lemon rind. Pour into dry ingredients and stir gently until just combined. Spoon batter into muffin cups and bake about 20 minutes until well risen, golden brown and firm to the touch. Let cool in pan 5 minutes, then serve warm or transfer to wire rack to cool completely.
