Baked Pesto Chicken

Yield: Serves 4
  • 4-6 boneless skinless chicken breasts
  • 1/2 c. pesto
  • 1 sliced tomato
  • 1-2 c. shredded mozzarella
  • 4 c. cooked rice
  1. Heat oven to 400 degrees. Place chicken in 8x12" baking dish. Spread pesto on chicken and top with tomato slices. Sprinkle with cheese and bake 30-40 minutes, until juices run clear. Serve over cooked rice.
