Baked Apples

Yield: 1 apple per person
  • 1 Granny Smith apple
  • 1 tsp. chopped pecans or walnuts
  • 1 Tbsp. brown sugar
  • 1 tsp. raisins
  • 1 Tbsp. butter
  • 1 3" cinnamon stick
  • whipped cream
  1. Preheat oven to 375 degrees. Cut the top off apple; core and seed it, but do not cut through to the bottom.
  2. Fill apple with nuts, sugar and raisins; dot with butter. Wedge cinnamon stick in the middle.
  3. Butter a pie dish; fill with 1/4" water and place apples in dish. Bake until apples are soft but still retain their shape (about 25 minutes). Serve with whipped cream.
This is just the thing for a cold night! I can't describe the home-cooked goodness of this recipe--you just have to taste it for yourself.
