Bacon Wrapped Chicken

Yield: 4 servings
  • 4 boneless skinless chicken breasts
  • 4 oz. cream cheese, sliced
  • 4 slices uncooked bacon
  • 1 tsp. chopped chives
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1/2 c. milk
  • 1 tsp. lemon juice
  • 1/4 tsp. pepper
  • pinch of salt
  1. Preheat oven to 325 degrees. Pound chicken pieces until flat; place one slice of cream cheese and one teaspoon of chopped chives in middle of each chicken. Roll up chicken, wrap with one slice of bacon and secure with toothpicks. Place in an 8x12" baking dish.
  2. Combine remaining ingredients in bowl and pour over chicken. Bake for 1 hour or until no longer pink and juices run clear. Remove toothpicks before serving.
I usually serve this over rice and it is very filling.
