Bacon and Tomato Cups

Yield: 30 cups
  • 8 slices bacon, cooked
  • 1 tomato, chopped
  • 1/2 onion, chopped
  • 4 oz. shredded Swiss cheese
  • 1/4 c. mayo
  • 1 tsp. dried basil
  • 30 mini phyllo cups
  1. Grease a mini muffin tin and line with phyllo cups. Stir together all ingredients and spoon into phyllo cups. Bake at 375 degrees for 10-12 minutes.
Each cup can be mounded fairly high, as the ingredients will melt down into the cup during baking.
