Apple Streusel Muffins

Yield: 12 muffins
  • 2 c. flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. salt
  • heaping 1/2 c. firmly packed brown sugar
  • 1 baking apple, peeled and finely chopped
  • 2 eggs
  • 1 c. milk
  • 6 Tbsp. melted, cooled butterStreusel Topping Ingredients:
  • 1/2 c. flour
  • 1/4 tsp. ground cinnamon
  • 3 Tbsp. slightly cold butter
  • 2 Tbsp. brown sugar
  1. Heat oven to 400 degrees and greae 12 muffin cups. To make streusel topping, mix flour and cinnamon. Cut in butter until mixture resembles fine breadcrumbs. Stir in sugar and set aside.
  2. In large separate bowl, sift together flour, baking powder, cinnamon and salt. Stir in sugar and apple. Beat eggs in separate bowl, then beat in milk and butter. Pour into dry ingredients and stir until just combined. Spoon into muffin cups and scatter streusel topping over each muffin. Bake about 20 minutes until well risen, golden brown and firm to the touch. Let cool in pan 5 minutes, then serve warm or transfer to wire rack to cool completely.
