Angel Food Cake French Toast

Yield: Serves 6
  • 1 angel food cake, store-bought or homemade
  • 2 eggs, whisked
  • 1/4 and 1/8 c. milk
  • 1 tsp. vanilla
  • 1/4 tsp. cinnamon
  • small pinch of nutmeg
  • butter
  • cream cheese and strawberry syrup*, optional
  1. Slice angel food cake into 12-14 pieces, or to desired thickness. In shallow dish combine eggs, milk, vanilla, cinnamon and nutmeg. Heat butter in skillet. Dip cake slices into egg mixture, resting a few seconds on each side. Cook in skillet until golden brown, about 2-3 minutes. Serve with cream cheese and strawberry syrup.
*Strawberry syrup: In medium saucepan combine 3 c. diced strawberries, 1 c. sugar, 2 Tbsp. lemon juice and 1/2 tsp. vanilla. Bring to a boil, reduce heat and let simmer gently approximately 15 mintues, stirring occasionally. Strawberries should be soft and syrup should be thickened and reduced in volume.
